Hillrock Double Cask Rye Whiskey is a small-batch spirit handcrafted at Hillrock Estate in New York’s Hudson Valley. Made from organically grown rye harvested on the estate, it reflects the region’s rich farming history. Master Distiller Dave Pickerell designed the process, using a custom copper pot still that gives precise control over flavor and quality.
After distillation, the whiskey is first aged in new oak barrels, then transferred to secondary American oak casks. These finishing barrels are air-seasoned for more than two years and charred with a #4 char. This double-barreling process gives the whiskey a smooth texture with layered notes of vanilla, caramel, and spice, while avoiding the bitter tannins often found in kiln-dried oak.
